De uien van de marinade kunnen tussen het vlees verdeeld worden. Zet het vlees vervolgens vast met een halve ui op de prikkers. Laat de spies vervolgens nog voor 30~45 minuten krokant bruinen in de oven. Snijd dunne strips van de spies en vang deze op in een andere ovenschaal. Houd deze afgedekt met aluminiumfolie warm in de oven en laat de spies opnieuw krokant bruinen. Herhaal dit een aantal keren tot de spies helemaal is opgesneden. Een restant dat te klein is om te snijden kan van de prikkers gehaald worden en op een snijplank fijngesneden worden. Laat op het laatst alle vlees nog even onder de grill wat krokanter worden en op kleur komen.
